Each of these heirloom, open-pollinated, non-GMO varieties has proven to be a winner in our short, harsh, and often drought-stricken Wyoming climate. Every variety is also determinate, AKA a bush variety, so no trellises or poles are required to grow them.

Given ideal growing conditions, each dry shelling bean variety will produce up to a quarter pound of dry beans per plant in our environment. Other environments may see even greater yields.

At Hickok Farms, we’ve primarily selected, grown, evaluated, and harvested beans that do the best in our Wyoming climate, then replanted year after year. The varieties we have selected are best suited for shelling and storing, although some varieties can be harvested fresh and cooked. In general, we’ve narrowed down the varieties to top performers that also store well, to increase our local resiliency and food security.
